Steamed Salted Egg Pork Patty
A classic Cantonese home-style dish: ground pork is mixed with salted egg white until it becomes sticky and cohesive, topped with salted egg yolk, then steamed until fully cooked, yielding a savory, fragrant, soft and silky smooth texture.
Ingredients
Pork (skinless, 30% fat 70% lean, minced)
300 g
White pepper
3 g
Salted eggs (separate and flatten the yolks; add the whites to the meat mixture)
2
Light soy sauce
25 g
Cornstarch
25 g
Peanut oil (used in batches)
25 g
MSG
2 g
Instructions
1
Make the patty
Mince the pork, then add salt, MSG, salted egg whites, and cornstarch and stir in one direction until the mixture becomes sticky. Add a pinch of peanut oil and mix well, then transfer the mixture to a plate and press it into a flat patty. Flatten the salted egg yolks and lay them on top of the pork patty. Steam over medium heat until cooked through.
2
Pour the sauce
Remove from the steamer. Stir some broth together with light soy sauce to taste, then pour the sauce over the pork patty and serve.
