Steamed Spareribs with Fermented Black Beans

Ingredients

Spareribs (cut into small pieces) 600 g
Fermented black beans (washed and drained)
Chili peppers (cut into thin strips)
Garlic (minced)
Cooking oil (heated to 180°C)
Sesame oil

Instructions

1

Ingredient Preparation

Cut the spareribs into small pieces, rinse under continuously running cold water for about 20 minutes to remove the blood, then lift out and drain. Wash the fermented black beans and drain well. Cut the chili peppers into thin strips. Mince the garlic and set aside.

2

Make Garlic Oil

Heat a pan and pour in the cooking oil, heating it to 180°C. Place the minced garlic from Step 1 into a large bowl, then pour the hot oil over the garlic to make garlic oil.

3

Marinate the Ribs

Place the spareribs from Step 1 into a large bowl, add all of Seasoning A along with the chili peppers and the fermented black beans, and mix thoroughly until the moisture is absorbed by the ribs. Then add the garlic oil from Step 2 and the sesame oil, and mix everything together.

4

Steam

Arrange the marinated ribs from Step 3 on a small plate, place it in a steamer, and steam over high heat for about 10 minutes until done.
