Steamed Stuffed Tofu

Ingredients

fish fillet (minced) 150 g
fatty pork 35 g
firm tofu (can substitute with cloth-wrapped tofu) 250 g
dried shrimp to taste
shiitake mushrooms to taste
dried tangerine peel to taste
scallion to taste
cornstarch to taste
oyster sauce to taste
cooking wine to taste
ginger juice to taste
sugar to taste
water to taste

Step 1

Soak the dried shrimp, dried tangerine peel, and shiitake mushrooms until softened, then chop into fine pieces. Cut the fatty pork into small dice. Add the seasonings to the fish meat and stir in one direction until the mixture becomes sticky. Add the dried shrimp, dried tangerine peel, shiitake mushrooms, fatty pork, and chopped scallion, and mix until evenly combined.

Step 2

Cut the tofu into rectangular blocks and scoop a small hollow in the center of each block. Sprinkle a little cornstarch into each hollow, then stuff the fish filling inside. Place the stuffed tofu in the microwave and cook on high for about 5 minutes. Meanwhile, combine the oyster sauce, cooking wine, a pinch of ginger juice, sugar, and water in a bowl and stir into a sauce; set aside.

Step 3

Remove the stuffed tofu from the microwave, pour over the prepared sauce, and return to the microwave on high for another 3 minutes. Serve immediately.
