Ingredient Preparation

Clean the softshell turtle by removing the innards, then blanch both the turtle and the chicken pieces separately in boiling water to remove blood.

Steaming

Place the chicken pieces at the bottom of a soup bowl as a base, and set the turtle on top along with the scallions, ginger, Shaoxing wine, the remaining seasonings, and the fresh stock. Steam over a steamer until completely tender, then remove. Take out the ginger pieces and transfer the chicken and turtle into a silver soup bowl.

Arrange slices of ham, baby bok choy hearts, and shiitake mushrooms in a decorative rib pattern on the turtle's belly, and place a large garnish marked with the character "jing" (jing) in the center.
