Steamed Tofu with Egg
Silken tofu steamed with eggs and topped with shrimp, yielding a tender, delicate texture.
Ingredients
Silken tofu (diced and briefly blanched in boiling water)
to taste
Fresh shrimp (lightly marinated with a pinch of salt)
to taste
Eggs (cracked into a large bowl, mixed with scallion-ginger water, fine salt, water, and water-starch slurry)
to taste
Scallion-ginger water
to taste
Water-starch slurry
to taste
Fine salt
to taste
Sesame oil (drizzled over the steamed egg)
to taste

Step 1
Dice the tofu, briefly blanch in boiling water and remove; crack the eggs into a large bowl, add the scallion-ginger water, fine salt, water, and water-starch slurry and whisk until smooth, then fold in the tofu cubes. Place the shrimp in a small bowl, lightly marinate with a pinch of fine salt, and then arrange them neatly on top of the tofu-egg mixture.

Place the large bowl holding the tofu mixture into a steamer and steam over medium-low heat for 15 minutes. Remove, drizzle with sesame oil, and serve.
