Prep the tofu and pork
Gently pat the tofu dry with paper towels and slice into thick rectangles. Arrange them in a single layer on a shallow steaming plate. Set aside.
Combine the ground pork with shaoxing wine, half the oyster sauce, half the soy sauce, cornstarch, and a pinch of white pepper. Mix well and let marinate for 20 minutes.
Cook the pork topping
Heat vegetable oil in a wok or pan over medium-high heat. Add the minced garlic and grated ginger, stir-fry until fragrant, about 30 seconds.
Add the marinated pork and break it apart with a spatula. Cook until the pork is no longer pink, then add the preserved turnip. Stir-fry for another minute until everything is well combined and slightly caramelized.
Steam and serve
