Step 1
Cut the mutton, white radish, and carrot into chunks; cut the green onion into sections; slice the ginger.
Step 2
Bring water to a boil in the pot, add the mutton, cook for about 5 minutes, and skim off the bloody water.

Remove and drain the water, then set aside

Pour an appropriate amount of oil into the pot, add the green onion, ginger, Sichuan peppercorns, and star anise, and stir-fry until fragrant

Add the mutton and stir-fry for a moment

Add an appropriate amount of water to submerge the lamb, add soy sauce, oyster sauce, cooking wine, and rock sugar

After the water boils, pour into a stew pot and stew for about 40 minutes

After 40 minutes, open the pot, add the white radish and carrots, add salt, cover the lid, and stew for another 20 minutes

After 20 minutes, the soup will be thickened

Transfer to a serving dish and garnish with cilantro to serve
