Story

These sweet rolls are brushed with egg wash and topped with a generous layer of powdered sugar for a golden, crisp crust. The butter tucked inside the scored dough melts as it bakes, adding richness to the tender crumb.

Ingredients

Bread flour 225g
Butter 18g
Yeast 3g
Sugar 38g
Salt 3g
Egg liquid 23g
Milk powder 8g
Water 113g
Butter to taste (softened)
Icing sugar to taste
Egg liquid to taste

Instructions

Step 1

Knead all ingredients until the expansion stage, then place in a container.

Ferment at room temperature until 2 to 2.5 times in size.

Press the fermented dough to degas, divide equally into 6 portions, roll into balls, and let rest for about 15 minutes.

Roll into an oval sheet, flip over, roll up from top to bottom, and tuck in the sides while rolling.

Seal the edges tightly.

Repeat for the remaining dough, then place in a warm, humid place for the final fermentation.

Use a sharp blade to score a 1 cm deep cut on the fermented dough, and place softened butter inside.
