Stir-Fried Assorted Vegetables
Hunan-style mixed vegetables featuring a colorful blend of assorted vegetables with a light, mildly spicy flavor.

Fresh mushrooms (remove stems, cut 1/2 deep with knife, press with hand to form fan shape)

Cutting preparation
Remove stems from fresh mushrooms, cut 1/2 deep with knife, press with hand to form fan shape. Cut shiitake mushrooms into plum blossom shape. Cut cucumber and carrot into 2cm segments, trim edges into butterfly shape. Peel tomato and cut into diamond slices. Peel ginger and cut into serrated slices. Break broccoli into small florets. Cut baby corn into segments. Peel water chestnuts, celtuce, and beetroot into balls.

Blanching
Blanch all main ingredients in boiling water.

Stir-frying and thickening
Heat a wok with a little oil, add all main ingredients, add chicken broth and seasonings to stir-fry, thicken with cornstarch slurry, drizzle with hot oil and serve.
