Luxury Five-Nut Mooncake Filling

This luxurious five-nut mooncake filling is essentially an eight-nut blend. A previous version used flour as a binder, but the texture wasn't appealing, so this simplified recipe uses lotus seed paste instead — quicker to prepare and tastier. The nut varieties can be swapped as long as the total weight remains the same, but keep the dried fruits as listed, as changing them will affect the flavor.

Step 1

Roast all the nuts. Even if using pre-roasted nuts, bake them again in the oven for better aroma. The nuts can be substituted — regardless of how many varieties you use, the total weight should remain the same. It's best not to change the dried fruits, as they affect the filling's flavor and texture.

Cut the roasted nuts (walnuts, cashews, almonds, etc.) into smaller pieces. Pour all the nuts into a container, add the other ingredients except the lotus seed paste, and mix well.

Then add the lotus seed paste and mix until well combined. Alternatively, you can first mix the lotus seed paste, peanut oil, and corn syrup together, then combine with the nuts and dried fruits. This method produces a more even mixture.
