Stir-fried Beef Slices

Ingredients

beef round tip (remove all fascia, wash, slice thin, pound flat) 250 g
sesame oil (for marinating) 16 g
soy sauce (for marinating) 45 g
green onion (minced, for marinating) 10 g
garlic puree (for marinating) 5 g
Chinese chives (minced, for marinating) 5 g
white sugar (for marinating) 6 g
chili oil (for marinating) 1 g
grilled beef dipping sauce (refer to 'grilled beef' recipe, original does not provide specific formula) 200 g
soybean oil (for stir-frying) 100 g

Slice and Marinate

Remove all fascia from the beef, wash, slice into thin pieces, and pound flat. Arrange the beef slices in a single layer on a plate, sprinkle with minced green onion, minced Chinese chives, and garlic puree, and marinate for 1 day.

Season and Re-Marinade

Mix white sugar, soy sauce, sesame oil, and chili oil until well combined, pour over the beef, mix thoroughly, and marinate for 3 hours. If stored in the refrigerator, extend the marinating time appropriately to ensure the beef is fully flavored.

Stir-fry and Serve

Pour soybean oil into a wok, heat to 70% of its maximum temperature over high heat, add the beef slices, stir-fry for several minutes, remove, drain excess oil lightly, and transfer to a serving plate.
