Stir-fried Beef Tripe with Coriander

Ingredients

beef tripe 250 g
coriander (picked, washed, cut into 3 cm segments) 75 g
chopped scallion 10 g
minced ginger 5 g
fine salt 3 g
vinegar 5 g
ground black pepper 2 g
clear broth 40 g
rendered chicken fat 25 g
sesame oil 15 g

Instructions

Boil the beef tripe

After cleaning the beef tripe, place it in a pot of cold water, boil for 3 hours until it is 70% tender, then remove from heat and soak in cold water.

Prep and cut

Lay the beef tripe flat on a cutting board, trim off the black outer layer, cut into pieces 5 cm long and 1.3 cm wide, then boil for 1 more minute. Pick, wash and cut the coriander into 3 cm segments.
