Stir-fried Beef with Enoki Mushrooms

Ingredients

beef tenderloin (washed and shredded) 150 g
enoki mushrooms (root removed, washed) 100 g
red chili pepper (washed, cut into segments) 1
green onion (washed, cut into segments) 1
ginger (washed and sliced) 1 small piece
starch (for marinating and thickening) to taste
cooking oil 30 g
sesame oil 1 tsp
oyster sauce 3 tsp
salt (original text says "1 small piece", likely a typo) 1 tsp
sugar (original text says "2") 2 tsp
MSG (original text says "2") 2 tsp
water starch (for thickening) to taste

Instructions

1

Prepare the ingredients

Rinse the beef and cut it into thin strips. Trim off the root cluster of the enoki mushrooms and wash them. Rinse the red chili pepper and cut it into segments. Rinse the ginger and slice it. Rinse the green onion and cut it into segments.

2

Marinate the beef

Add the salt, MSG, and water starch to the beef strips, mix well, and marinate for 5 minutes. Heat oil in a wok, then stir-fry the beef until it is about 80% cooked. Remove and set aside.

3

Combine and finish the dish

Add more oil to the wok, then add the ginger and red chili pepper and stir-fry until fragrant. Add the enoki mushrooms, salt, MSG, sugar, and oyster sauce, then return the beef to the wok and stir everything together. Thicken the sauce with water starch, drizzle in the sesame oil, sprinkle with the green onion, and serve.
