Stir-Fried Brussels Sprouts with Salt Pork

Every so often, pick up skin-on salt pork for stir-fries. Render the excess fat from the pork first, then use the infused oil to cook mild, oil-absorbing vegetables like Chinese broccoli, Chinese mustard greens, broccoli, and Brussels sprouts. Pre-packaged Brussels sprouts are readily available at most local supermarkets, and they make a delicious, flavorful pairing with salt pork.
