Stir-Fried Cauliflower with Pork Slices

Step 1
Slice the pork, add cooking wine and white pepper powder and mix by hand. Marinate for 10 minutes to remove the meaty smell. Break the cauliflower into small pieces and soak in salt water to remove any insect eggs and pesticide residue.

Add an appropriate amount of water to the pot, add a pinch of salt. When the water is almost boiling, add the cauliflower and blanch until just cooked, which should happen around when the water comes to a boil.
Step 3
Transfer the blanched cauliflower into cold water and cool completely for a better texture.
Step 4
Add an appropriate amount of corn oil to the wok, then pan-fry the pork slices until they change color.
Step 5
Add garlic slices and sauté until fragrant.
Step 6
Add soy sauce and stir-fry evenly. Soy sauce enhances umami and flavor.
Step 7
Drain the cauliflower and add it to the pork slices. Stir-fry together, season to taste, and serve.
