Stir-fried Chicken Shreds

Ingredients

Chicken breast (remove tendons and skin, cut into shreds, marinate with salt, egg white, and wet cornstarch) 400 g
Canned bamboo shoots (remove tough fibers, cut into shreds, blanch through) 150 g
Egg white 50 g
Vegetable oil (about 50 g actually consumed) 800 g
Chicken fat 10 g
Cooking wine 15 g
MSG 5 g
Salt (2 g used to marinate the meat, 2 g used for seasoning) 4 g
Wet cornstarch (some for marinating the meat, some for thickening) 25 g
Chicken broth 50 g

Instructions

Step 1

Peel off the tough fibers of the bamboo shoots and cut into shreds. Blanch in a pot of boiling water until just cooked through, then lift out and place in cold water. Remove the tendons and skin from the chicken breast, cut into shreds, and mix evenly with 2 g salt, egg white, and an appropriate amount of wet cornstarch to marinate.

Step 2

Heat a wok over high heat, add the vegetable oil, and heat to about 50–60% hot. Add the marinated chicken shreds, spread them out and slide them through until cooked, then lift out and drain off the oil.

Step 3

Return the wok to the heat, pour in 25 g of vegetable oil and heat. Add the bamboo shoot shreds to the wok and stir-fry. Splash in the cooking wine, then add the MSG, chicken broth, and 2 g salt. Add an appropriate amount of wet cornstarch to thicken, then pour in the chicken shreds and toss a few times. Drizzle in the chicken fat and it is done.
