Goji Berry and Maidong Egg Cubes

A nourishing medicinal meal that tonifies the liver and kidneys, made by stir-frying diced egg and diced lean pork with goji berries and finely chopped ophiopogon (maidong), thickening the sauce, and finishing with a topping of crispy peanuts.

Goji Berry and Maidong Egg Cubes

Ingredients

Eggs (steamed over water and diced) 5
Goji berries (washed and briefly blanched) 30 g
Peanuts (fried until crispy) 30 g
Lean pork (diced) 30 g
Maidong / Ophiopogon (cooked and minced) 10 g
Salt to taste
Cornstarch (slurried with water for thickening) to taste
MSG to taste
Peanut oil (for stir-frying) to taste

Preparing the Ingredients

Fry the peanuts until crispy. Wash the goji berries and briefly blanch them in boiling water. Wash the maidong, simmer it in boiling water until tender, then chop it into fine bits. Dice the lean pork. Crack the eggs into a bowl, add a pinch of salt, and beat well. Pour the beaten egg into another bowl (the inside of which has been brushed with oil), steam over simmering water until set, let cool, then cut the egg into small dice.

Stir-frying and Thickening

Place a wok over high heat, add the peanut oil, and stir-fry the diced pork until cooked through. Add the diced egg, goji berries, and minced maidong, toss to combine, season with a pinch of salt, and thicken with the cornstarch slurry.

Seasoning and Plating

Finish with MSG to taste, scatter the crispy peanuts over the top, and serve.
