Stir-fried Chive Blossoms with Preserved Eggs

Ingredients

preserved eggs (boiled in water for 5 minutes after reaching a boil, then soaked in cold water, peeled and sliced) 3
ground pork 50 g
chive blossoms (washed, ends trimmed, cut into short segments) 30 g
dried chili peppers (cut into segments) 2
fermented black beans (soaked in cooking wine) 1 tbsp
cooking wine (used to soak the fermented black beans) 1 tbsp
fine salt 1 tsp
MSG 2 tsp
cooking oil 30 g

Instructions

1

Prepare preserved eggs

Place the preserved eggs in water, bring to a boil and continue boiling for 5 minutes, then turn off the heat. Remove and soak in cold water; once cooled, peel and slice for later use.

2

Prep ingredients

Soak the fermented black beans in cooking wine. Wash the chive blossoms, trim off the ends, and cut into short segments for later use. Cut the dried chili peppers into segments.

3

Stir-fry

Heat oil in the pan, stir-fry the ground pork until the fat renders, then add the dried chili segments, fermented black beans, fine salt, and MSG; stir-fry until fragrant.

4

Finish

Add the preserved egg slices and chive blossoms to the pan, stir-fry until cooked through, then plate and serve.
