Stir-fried Clam Meat with Chinese Chives
A quick stir-fry dish with tender, succulent meat and the fragrant, savory flavor of fresh garlic chives.

Clam meat (main ingredient)

Chinese chives, cut into segments (main ingredient)

Scallion ginger oil (seasoning)

Cooking wine (seasoning)

MSG (seasoning)

Clean clam meat
Soak the clam meat in clean water for 2 minutes first, remove dirt, squeeze out the digestive tract, rinse several times, then drain off excess water.

Stir-fry and cook
Heat the wok over high heat, heat the scallion ginger oil to approximately 70% of its smoking point, add the clam meat to the hot oil and toss quickly a few times, pour in the cooking wine, add soy sauce, MSG and salt, then add the Chinese chive segments and stir-fry for about 3 seconds, drizzle with sesame oil and serve.
