Stir-Fried Cucumber with Pork Slices

Ingredients

Pork belly (washed, fascia removed, cut into 2 cm wide thin slices) 150 g
Cucumber (washed, peeled, deseeded, sliced thin) 250 g
Sesame oil (for stir-frying) 75 g
Rehydrated wood ear mushroom (cleaned, torn into small pieces) 5 g
Chicken broth (for slurry sauce) 50 ml
Chili sauce (for seasoning) 10 g
Fine salt (for seasoning, used in stages) 2 g
Soy sauce (for seasoning, used in stages) 25 g
Scallion (cut into 2 cm long strips) 25 g
Ginger (cut into slices) 15 g
Garlic (cut into slices) 15 g
Starch (used in stages, for coating and slurry) 100 g

Instructions

1

Marinate the pork

Wash the pork, remove the fascia, and cut into 2 cm wide thin slices. Add 1 g salt, 10 g soy sauce, and 50 g starch, then stir well to combine.

2

Prepare the vegetables

Wash the cucumber, peel and deseed it, and slice thinly. Cut the scallion into 2 cm long strips; cut the ginger and garlic into slices. Wash the dried chili, remove the stem, and cut into strips. Clean the rehydrated wood ear mushroom and tear into small pieces.

3

Mix the slurry

In a small bowl, combine 15 g soy sauce, 1 g salt, 50 g starch, and a small amount of chicken broth to make a slurry.

4

Stir-fry

Heat a clean wok until hot, add the sesame oil, and heat to about 70% hot. Add the pork slices, spread them out, then add the ginger, garlic, scallion, chili sauce, and cucumber slices. Stir-fry briefly, pour in the slurry, cook until the sauce is done, then remove from the wok, plate, and serve.
