This classic Chinese stir-fry combines lean deer meat with colorful vegetables for a dish that's both nutritious and full of flavor. The key is having all your ingredients prepped and ready before you start cooking, as stir-frying happens quickly.

Ingredients

deer leg meat 300g, thinly sliced against the grain
vegetable oil 3 tablespoons
light soy sauce 2 tablespoons
cornstarch 1 tablespoon
Xiaomi chili peppers 4-5, roughly chopped
fresh ginger 1 inch, julienned
green bell pepper 1, sliced into strips
fresh cilantro a handful, roughly chopped
garlic 2 cloves, minced
salt to taste
sesame oil 1 teaspoon (optional)

Instructions

Prepare the deer meat

Slice the thawed deer leg meat thinly against the grain into bite-sized strips. Place in a mixing bowl.

Marinate the meat

Add 1 tablespoon of vegetable oil, the soy sauce, and cornstarch to the meat. Mix thoroughly until the meat is evenly coated. Let it sit for 10 minutes to absorb the flavors and tenderize.

Prep the vegetables

While the meat marinates, chop the Xiaomi chili peppers, julienne the ginger, slice the green pepper into strips, and roughly chop the cilantro. Have everything within arm's reach of your stove.

Stir-fry the aromatics

Heat a wok or large skillet over high heat. Add the remaining vegetable oil. Once shimmering, add the Xiaomi peppers, ginger, and garlic. Stir-fry for about 30 seconds until fragrant.

Cook the meat

Add the marinated deer meat to the wok. Spread it out in a single layer and let it sear for 30 seconds before stir-frying. Cook for 2-3 minutes until the meat is just cooked through but still tender.

Add vegetables and finish

Add the green pepper strips and toss everything together for another minute. Remove from heat, stir in the cilantro, and drizzle with sesame oil if using. Season with salt to taste and serve immediately over steamed rice.
