Stir-fried Dried Noodles
A friend sends me boxes of dried rice noodles from time to time. When I first started working and money was tight, I often ate stir-fried rice noodles — they were incredibly delicious back then. Even though I don't eat them as often now, I still miss that flavor. If you enjoy them too, I'd be happy to share Yanzi's family rice noodles.

Let me show you how much effort goes into making this dried noodle dish—feel free to skip some of the extra toppings if you want.

Soak the dried noodles in cold water in advance; if I'm having this for breakfast, I soak them the night before and they're ready by morning.

Shred the cabbage into thin strips.
Step 4
Peel the carrot and shred it into thin strips.
Step 5
Shred the bacon into thin strips; you can use other similar ingredients if you don't have bacon.

Beat 3 eggs until loose.
Step 7
Leafy greens are a must for this dish.
Step 8
Remove the veins and shells from the peeled shrimp.

Drain the soaked noodles, add a little light soy sauce, and mix well by hand.

Pour oil into the pan and heat it slightly, then pour in the egg mixture. When the edges start to set, use chopsticks to scrape the edges.
Step 11
Turn off the heat quickly once the egg is set, otherwise it will get tough. See how soft and tender mine is? Set it aside for later use.

Add oil to the pan, then add the shredded bacon and dried chili segments, and stir-fry over low heat until fragrant.

Next, add the shrimp.

The carrot strips take a while to cook, so you can add them now too.

Stir-fry for a bit, then add the shredded cabbage.

Add 1 spoonful of light soy sauce and 0.5 spoonful of oyster sauce.

Add most of a bowl of water and let it simmer for a short while.

When there is only a little sauce left in the pan, add the shredded dried noodles.

Stir-fry quickly to mix everything evenly.

Add a pinch of salt and chicken powder.

Add the leafy greens right before taking the dish out of the pan.

And it's done! It smells so good, and with all the hearty ingredients, you can eat a whole big plate in one go.
