Stir-fried Fish Slices with Chinese Yam

A home-style dish of stir-fried black carp fillet and yam slices, finished with a cornstarch slurry and a drizzle of sesame oil.

Stir-fried Fish Slices with Chinese Yam

Ingredients

Qing fish (cleaned, skin, bones, and thorns removed, cut into slices horizontally) 250 g
Chinese yam (peeled, cleaned, cut into slices) 150 g
Cooking oil to taste
Cooking wine to taste
Starch to taste
Scallion (cut into sections) to taste
Ginger (sliced) to taste
MSG to taste
Salt to taste
Sesame oil to taste

Instructions

Step 1

Rinse the fish meat, remove the skin, bones, and thorns, then cut into horizontal slices. Add cooking wine and starch, mix well, and set aside.

Peel the Chinese yam, rinse it, and cut into slices; cut the scallions into sections; slice the ginger.

Heat cooking oil in a pan, add scallion sections and ginger slices and stir-fry until fragrant. Add the fish slices and yam slices, stir gently. Then add salt and MSG, and stir-fry until both the fish slices and yam slices are cooked. Thicken the mixture with water starch, drizzle with sesame oil, stir briefly, and serve.
