Winter Melon Ham Cuttlefish Soup

Ingredients

winter melon (peeled, washed, sliced) 1
ham (cut into small thin slices) 2 slices
cuttlefish (cut into sections or scored) 1
ginger (cut into shreds) a small piece
cooking wine 2 tbsp
scallions (chopped) 3
fine salt 1 tsp

Prepare Ingredients

Peel the winter melon, wash it and slice it. Cut the ham into small thin slices. Cut the cuttlefish into sections or score it, either works. Cut the ginger into shreds, chop the scallions.

Blanch the Cuttlefish

Bring a small amount of water to a boil in a pot. Add the cuttlefish, blanch for a few seconds to remove the fishy smell, then remove and drain.

Simmer

After washing and drying the pot, add a small amount of oil and heat it. Add the shredded ginger and stir-fry, then add the cuttlefish and ham slices. Pour in 2 tbsp of cooking wine and stir-fry. When you smell the strong mixed aroma of ham and seafood, pour a large bowl of water into the pot and add the winter melon slices. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 20 minutes.

Season

After 20 minutes, the winter melon soup will be very rich and fragrant. Add 1 tsp of salt, stir to combine, then turn off the heat. Sprinkle with chopped scallions.
