Stir-Fried Lamb Shreds

Stir-Fried Lamb Shreds

Ingredients

Lamb (remove fascia, cut into shreds) 200g
Sugar 2.5g
Potato (peeled, cut into thin shreds) 100g
Black pepper 1g
Soy sauce 20g
Egg white 1
Salt (2g for marinating) 2.5g
Cooking oil (used in two batches) 60g
Chopped scallion 5g

Step 1

Remove the fascia from the lamb, slice it into thin pieces about 0.5 cm thick, then cut along the grain into shreds about 4.5 cm long. Place in a bowl, add salt (2g) and egg white, and mix well by hand. Peel the potato and cut into thin shreds.

Step 2

Place the wok over the heat, add 40g of cooking oil and heat until hot, then stir-fry the lamb until it loosens and changes color, then remove. Add the remaining 20g of oil to the wok and heat, add the chopped scallion and stir-fry until fragrant, add the potato shreds and briefly stir-fry, then add the lamb shreds, soy sauce, salt, sugar, and water (50g). Stir-fry evenly, sprinkle with black pepper, and serve.
