Stewed Old Duck with Fox Nuts
A medicinal dish once favored by Yu You-ren. Fox nuts are stuffed into the duck's cavity and gently simmered over low heat. Traditionally believed to quench thirst, tonify the kidneys, promote urination, and strengthen the spleen.
Ingredients
Fox nuts (stuffed into the duck's belly)
500 g
Old duck (about 1500 g)

Scallions

Ginger
to taste
Shaoxing wine
to taste
Salt (added 2–3 minutes before finishing)

Instructions

Stuffing
Stuff the fox nuts into the cavity of the old duck.

Braising
Place the duck together with the scallions, ginger, and Shaoxing wine into a clay pot, add enough cold water to cover, and simmer on low heat for three hours.

Seasoning
Add the salt 2–3 minutes before finishing, and serve.
