Stir-Fried Minced Pork with Pickled Cabbage
A Sichuan-style dish: stir-fry minced meat with dried chili peppers, scallions, and ginger until fragrant and slightly crisp, then add minced garlic and drained pickled cabbage (paocai) and toss together. Sour, spicy, and appetizing.

Crisp the minced pork
Fry the dried chilies in lard until fragrant and spicy, then add the minced pork along with the scallion and ginger, and stir-fry until the pork is crisp and crumbly.

Season and finish the dish
Add the minced garlic, Shaoxing wine, oil, sugar, and sesame oil, and toss a few times. Finally, stir in the pickled cabbage (finely chopped and water squeezed out) and stir-fry for about two minutes until everything is well combined and heated through.
