Stir-Fried Octopus

A traditional Korean stir-fry featuring fresh octopus as the main ingredient, combined with bamboo shoots, mushrooms, and wood ear mushrooms. Quickly tossed over high heat and finished with sesame seeds for aroma.

Stir-Fried Octopus

Ingredients

Fresh octopus meat (washed clean, cut into 3 cm pieces) 250 g
Canned bamboo shoots (julienned) 15 g
Mushrooms (rehydrated and julienned) 25 g
Rehydrated wood ear mushrooms (torn into small pieces) 15 g
Soybean oil (for stir-frying) 35 g
Soy sauce 25 g
Cooking wine 15 g
MSG 2 g
Starch (for thickening) 25 g
Green onion (peeled, washed, minced) 5 g
Garlic (peeled, washed, minced) 3 g
Ginger (peeled, washed, minced) 5 g
Fine salt 2 g
Sesame seeds (roasted) 10 g

Preparation

Wash the octopus clean and cut it into 3 cm pieces. Julienne the canned bamboo shoots and rehydrated mushrooms. Tear the rehydrated wood ear mushrooms into small pieces. Peel, wash, and mince the green onion, ginger, and garlic.

Blanching the Octopus

Blanch the octopus in boiling water, then drain well.

Stir-Frying

Heat a wok over high heat and add the soybean oil. When the oil is about half-hot, add the minced green onion, ginger, and garlic and stir-fry until fragrant. Add the octopus slices, bamboo shoot strips, mushroom strips, and wood ear pieces and stir-fry briefly. Add the cooking wine, MSG, and salt and stir-fry again to adjust the seasoning. Stir in a small amount of starch to thicken, transfer to a bowl, sprinkle with sesame seeds, and serve immediately.
