Stir-fried Pea Shoots with Chicken Slices

Ingredients

chicken breast 300 g
pea shoots (trimmed and washed) 500 g
eggs (egg whites only) 2
lard 80 g
salt 8 g
MSG (monosodium glutamate) 6 g
cooking wine 30 g
wet starch 30 g
broth to taste

Instructions

1

Step 1

Trim and wash the pea shoots. Mix the egg whites with the wet starch to make a smooth batter.

2

Step 2

Slice the chicken breast into pieces about 4 cm long and 2 cm wide. First toss evenly with the cooking wine, then coat the slices with the egg batter, and finally stir in a little oil.

3

Step 3

Combine the salt, MSG, cooking wine, wet starch, and broth in a bowl to make a sauce.

4

Step 4

Heat the wok and add oil. When the oil is hot, add the chicken slices, gently separate them, and slide-fry until just cooked, then remove and drain. Leave a small amount of oil in the wok, add the pea shoots and stir-fry a few times, then return the chicken to the wok and toss to combine. Pour in the prepared sauce, and once it comes to a boil, stir everything evenly to coat and serve.
