Stir-Fried Pork Liver with Bitter Melon

Ingredients

bitter melon (washed, deseeded, salted to remove bitterness, cut into pieces) 125 g
pork liver (washed, sliced thinly, marinated with wine and salt for 10 minutes, blanched in boiling water) 250 g
garlic 1 clove
Shaoxing wine 1 tbsp
soy sauce to taste
sesame oil to taste
salt to taste
MSG to taste

Step 1

Wash the bitter melon, remove the seeds, salt for 5 minutes to remove the bitterness, then cut into pieces.

Wash the pork liver and slice it thinly. Marinate with Shaoxing wine and salt for 10 minutes, then blanch in boiling water and drain.

Place the wok over high heat. Once the oil is hot, add the bitter melon and stir-fry briefly. Add soy sauce and butter (likely garlic oil or cooking wine) and stir briefly. Add the pork liver and stir-fry. Season with MSG to taste and serve.
