Pork liver (cut into large slices, pat dry with cloth, mix with dry starch)

Shaoxing wine

minced garlic

light soy sauce

wet starch (for sauce)

dry starch (for coating pork liver)

Instructions

Marinate Pork Liver
Cut pork liver into large slices, pat dry with cloth, mix with dry starch

Prepare Sauce
In a bowl, combine stock, salt, light soy sauce, MSG, white pepper, and wet starch to make a sauce

Stir-Fry Choy Sum
Heat oil in wok, add choy sum and salt, stir-fry until cooked, then remove

Stir-Fry Pork Liver
Heat oil until 70% hot, add pork liver to hot oil, blanch until cooked through, then remove

Combine and Serve
Leave base oil in wok, add minced garlic and ginger to aromatize, then add pork liver, choy sum, and Shaoxing wine. Pour in prepared sauce, mix well, add sesame oil, then transfer to serving plate.
