Stir-fried Pork Skin

Bring water to a boil in a pot, add the pork skin to cold water, and once boiling, cook for five minutes then turn off the heat.

Remove any hairs from the cooked pork skin and rinse it clean.

Scrape off the fat.

Cut the pork skin into strips.
Step 5
Slice the green and red peppers, mince the garlic, and julienne the ginger.

Heat oil in a pan and sauté the garlic, ginger, and green and red peppers until fragrant.

Add the pork skin and stir-fry for one minute.

Add a spoonful of dark soy sauce and stir-fry a few times.

Add a spoonful of oyster sauce.

Add a pinch of sugar to enhance the flavor.
