Stir-fried Pork Slices with Black Fungus and Celery

Ingredients

pork (sliced) 6 liang
celery (remove tough strings, slice) 1/4 head
black fungus (soak in hot water until soft, remove stems, rinse clean) 1 piece
scallion whites (cut into segments) 2 stalks
garlic (minced) 1 clove
cooked bamboo shoots 6 slices
cooking wine 1 tbsp
oyster sauce (seasoning) 1 tbsp
light soy sauce (seasoning) 1 tsp
sugar (seasoning) 1/2 tsp
cornstarch (seasoning) 1/2 tsp
salt (seasoning) to taste
oil (seasoning) to taste

Instructions

Marinate the pork slices

Slice the pork, add seasonings (oyster sauce, light soy sauce, sugar, cornstarch), mix well and marinate for a short while.

Prepare side ingredients

Remove tough strings from celery and slice; soak black fungus in hot water until soft, remove stems and rinse clean.

Stir-fry celery

Heat oil in a wok, add celery over high heat, stir-fry with salt until it changes color, then remove and set aside.

Stir-fry all ingredients

Heat the wok, sauté minced garlic until fragrant, add pork and stir-fry until it turns white. Then add black fungus, celery, scallion whites, pour in cooking wine, add bamboo shoot slices, stir quickly to combine, cover and simmer briefly, then serve when cooked through.
