Stir-Fried Pork Tenderloin

Stir-Fried Pork Tenderloin

Ingredients

lean pork
MSG to taste
cooking wine 2 qian
sugar 5 qian
soy sauce 2 qian
vinegar 3 qian
wet cornstarch 2 liang
cooked lard a pinch
peanut oil 2 liang
scallion a pinch
ginger a pinch
salt a pinch

Step 1

Cut the pork into 1-inch rolling chunks. Add a small amount of cooking wine, soy sauce, and salt, toss to let the flavors absorb, then coat evenly with a cornstarch paste.

Heat a wok over high heat with oil. When the oil is hot, add the cornstarch-coated pork pieces to fry. Separate any pieces that stick together; if the oil becomes too hot, move the wok to medium heat to continue frying. Fry for about 5 minutes until done.

Combine cornstarch, sugar, vinegar, soy sauce, salt, MSG, cooking wine, and minced scallion and ginger to make the sauce. Place a small amount of cooked lard in the wok, set over heat until hot, then pour in the prepared sauce. When the sauce thickens, add the fried pork pieces and toss a couple of times, then drizzle with a little peanut oil to finish.
