Stir-Fried Rapeseed Greens
This Chinese stir-fry recipe for 爆炒油菜心 (stir-fried choy sum) features fresh choy sum and garlic cloves as its core ingredients.
Ingredients
Instructions
Step 1
Rinse the rapeseed greens thoroughly, then add two spoonfuls of salt and soak for five minutes. This sterilizes the greens and helps them stay bright green when stir-fried.
Step 2
Smash the garlic cloves flat with the side of a knife; do not finely chop them. This way anyone who does not enjoy garlic can easily pick them out, and those who do can eat them conveniently.
Step 3
Heat oil in a wok and sauté the garlic until fragrant.
Step 4
Add the rapeseed greens and stir-fry over high heat.
Step 5
While stir-frying, sprinkle a little water around the inner edge of the wok. This keeps the vegetables crisp and tender rather than dry, preserves their vibrant color, and helps them cook through quickly.
Step 6
When the greens are just cooked through but still crisp, add only oyster sauce; no extra salt is needed.
Step 7
Quickly toss to coat evenly with the sauce, then transfer to a serving plate.
Step 8
Finished dish: crisp, tender, refreshing, and absolutely delicious.
