Stir-Fried Sea Intestine with Chinese Chives

Stir-Fried Sea Intestine with Chinese Chives

Ingredients

Live sea intestine 1000 g
Chinese chives (washed and cut into segments) 100 g
Refined salt to taste
Vegetable oil to taste
Monosodium glutamate to taste
Vinegar to taste
White pepper powder to taste
Wet cornstarch slurry to taste
Sesame oil to taste
Shredded scallion to taste
Shredded ginger to taste

Instructions

Prepare the ingredients

Trim off both ends of the sea intestines, remove the grit, wash thoroughly, and cut into inch-long segments. Wash the Chinese chives and cut into segments.

Blanch the sea intestines

Add water to a pot and bring it to about a rolling boil. Drop in the sea intestines and blanch just until cooked through, then lift out and drain.

Stir-fry

Heat oil in a separate wok until hot. Stir-fry the scallion and ginger until fragrant, splash in the vinegar, then add the Chinese chives, sea intestines, and remaining seasonings. Stir-fry until everything is evenly combined, thicken with the wet cornstarch slurry, drizzle with sesame oil, toss to coat, and serve.
