Stir-Fried Sea Intestine with Yellow Chives

Ingredients

cleaned sea intestine 350 g
refined salt 5 g
rendered lard 500 g
sesame oil 3 g
yellow chives 200 g
monosodium glutamate 2 g
cooking wine 3 g

Instructions

Step 1

Wash the yellow chives thoroughly, then cut into 3 cm long segments; cut the cleaned sea intestines into 8 cm long segments, then rinse with clean water.

Bring clean water to a rolling boil in a wok, add the sea intestines and blanch briefly, then remove and drain all excess moisture.

Add 450 g of rendered lard to the wok and heat until 80% hot, add the sea intestines and flash fry briefly, then remove and drain excess oil. Heat the remaining 25 g of rendered lard in the wok, add the yellow chives and stir-fry for a short while, pour in the cooking wine, add the sea intestines, refined salt and monosodium glutamate, stir-fry quickly a few times until crisp and cooked through, drizzle with sesame oil and mix well, then transfer to a serving plate.
