Potato Biscuit Sandwich

A buttery biscuit made with mashed potatoes, split and filled with sautéed sliced beef and button mushrooms for a savory sandwich.

Potato Biscuit Sandwich

Ingredients

all-purpose flour (about 1 3/5 cups) 200 g
baking powder 2 tsp
salt 1/2 tsp
peeled potato (cut into small pieces, boiled, and mashed) 100 g
frozen butter (cut into small pieces) 60 g
fresh milk 1/2 cup
sugar 1 tbsp

Instructions

Step 1

Sift the all-purpose flour together with the baking powder and salt into a mixing bowl.

Cut the peeled potato into small pieces, boil until tender, mash while hot, and let cool before using (or refrigerate). Cut the frozen butter into small pieces.

Mix the fresh milk with the mashed potato and sugar, then pour into the flour. Use a rubber spatula to bring together into a dough—do not overmix to avoid developing gluten. Transfer to a floured surface and dust the top of the dough with a little flour to prevent sticking.

Dust the rolling pin with flour and roll the dough out to about 0.8 cm thick. You may also use the palm of your hand to press it flat, but be sure to dust both hands with flour to prevent sticking. Cut the dough into rectangles about 4 cm x 6 cm.

Arrange evenly on a parchment-lined baking tray, spacing each piece about 1.5–2 cm apart. Bake in a preheated oven at 200°C for about 15 minutes.

To serve, split open and fill with sliced mushroom and meat.
