Stir-Fried Sea Snail with Chinese Chives

Ingredients

Sea snail meat (cut open from the middle notch to keep connected, patted flat with the blade of a knife, and sliced into round pieces about 6 cm thick) 150 g
Chinese chives (washed clean and cut into 4 cm segments) 150 g
Peanut oil 35 g
Soy sauce 10 g
MSG 1.5 g
Cooking wine 15 g
Scallion (julienned) 10 g
Ginger (julienned) 5 g
Garlic (minced) 5 g
Fine salt 25 g
Sesame seeds (toasted) 10 g

Preparation

Cut the sea snail meat open from the middle notch so it stays connected, pat it flat with the flat side of the knife, and slice into round pieces about 6 cm thick. Wash the Chinese chives clean and cut into 4 cm long segments.

Blanching the Sea Snail

Drop the sea snail slices into a pot of boiling water to blanch briefly, then remove and drain thoroughly.

Stir-Frying

Heat a wok and add the peanut oil. Once hot, stir-fry the ginger, scallion, and garlic until fragrant, then add the Chinese chives and toss for a few seconds. Add the sea snail slices and stir-fry to combine, then season with soy sauce, MSG, cooking wine, and salt. Stir-fry briefly to meld the flavors, plate, sprinkle with the toasted sesame seeds, and serve immediately.
