Stir-Fried Shredded Pork with Chives

Ingredients

Pork (use 50g fatty meat and 150g lean meat, washed and cut into 4cm long, thin shreds) 200g
Tender chives (washed, drained, and cut into 3cm segments) 100g
Refined salt 4g
Soy sauce 15g
Sugar 2.5g
Cooking oil 50g

Instructions

1

Preparation

Use 50g fatty meat and 150g lean meat, wash well, and cut into 4cm long, very thin shreds. Wash the chives, drain thoroughly, and cut into 3cm segments.

2

Stir-fry the pork

Place the wok over the heat, add 35g of cooking oil and heat until hot. Add the fatty pork shreds and stir-fry until the fat renders out. Add the lean pork shreds and stir-fry until the meat changes color. Add the soy sauce and continue stir-frying until the pork shreds are evenly coated in color, then remove and set aside.

3

Stir-fry the vegetables

In the same wok, add the remaining oil and heat. Add the chives along with the salt and sugar, and stir-fry briefly until just wilted.
