Stir-Fried Shrimp with Broad Beans

Ingredients

shrimp 500g
tender broad beans (peeled and split in half) 120g
egg (use the white to make a batter) 1
lard (about 50g actually used) 600g
salt (for marinating shrimp and seasoning the sauce) 4g
MSG (for marinating shrimp and seasoning the sauce) 4g
cooking wine (for marinating shrimp and seasoning the sauce) 15g
white pepper 1g
ginger (sliced) 3g
scallion (sliced) 5g
wet cornstarch (for coating shrimp and thickening the sauce) 20g
broth (for the sauce) 25g

Marinate the Shrimp

Toss the shrimp with 1.5g each of scallion, ginger, salt, and MSG, along with 1g of white pepper and 5g of cooking wine, and let it rest briefly. Before cooking, pick out the scallion and ginger, then coat the shrimp with 12g of wet cornstarch and the egg white batter.

Prepare the Ingredients

Peel the broad beans and split them in half, blanch in boiling water, then refresh under cold water. Slice both the scallion and the ginger. Combine 3g each of MSG and salt with 8g each of wet cornstarch and cooking wine, plus the broth, to make the sauce.

Stir-Fry to Finish

Reserve a little oil in the wok, quickly stir-fry the broad beans, then add the shrimp and toss a few more times. Pour in the prepared sauce, and once it comes to a boil, mix everything together and serve.
