Stir-Fried Shrimp with Fresh Milk

Ingredients

Shrimp (washed and drained) 100 g
Fresh milk (1 tbsp for slurry, 4 tbsp for boiling) 5 tbsp
Egg whites (beaten) 4
Fried olive nuts 250 g
Diced ham 15 g
Fine salt (divided use) 2 tsp
MSG (divided use) 1 tsp
Wet cornstarch 0.5 tbsp
Cooked lard (small amount actually used) 500 g

Instructions

1

Marinate the shrimp

Wash and drain the shrimp, then marinate with half of the salt and MSG.

2

Prepare the slurry

Mix the wet cornstarch into 1 tbsp of milk to form a slurry; beat the egg whites with the remaining half of the salt and MSG until well combined.

3

Blanch the shrimp

Heat oil in a wok to medium-hot (about 50% hot), briefly pass the shrimp through the oil, then remove and drain.

4

Combine the ingredients

Bring the 4 tbsp of milk to a boil in a small pot, then remove from heat. Combine the boiled milk, cornstarch slurry, egg white mixture, shrimp, and diced ham in a bowl and stir gently until evenly mixed.

5

Stir-fry into a thick paste

Heat 0.5 tbsp of oil in a wok to about 40% hot, pour in the combined milk mixture, and stir continuously while drizzling in 0.5 tbsp of oil in two additions. Stir-fry until the mixture thickens into a smooth, creamy paste.

6

Plate and serve

Add the fried olive nuts, drizzle in another 0.5 tbsp of oil, toss quickly to combine, and transfer to a serving plate.
