Stir-Fried Shrimp with Tofu

Ingredients

Tofu (cut into cubes, blanched in boiling water and drained) 300 g
Shrimp (deveined) 100 g
Salt 8.5 g
MSG 2 g
Cooking wine 4 g
Chicken broth or water 20 g
Starch 3 g
Oil 40 g
Sesame oil 1 g
Scallion (sliced) 1 g
Ginger (sliced) 1 g
Egg (use half) 1

Ingredient Preparation

Cut the tofu into cubes, blanch in boiling water, and drain. Slice the scallion and ginger. Devein the shrimp.

Prepare Sauce and Marinate Shrimp

In a bowl, combine the scallion, ginger, salt, MSG, cooking wine, chicken broth, starch, and sesame oil to make the sauce. Place the shrimp in a separate bowl, add salt, cooking wine, starch, and half of the egg, and mix well.

Stir-Fry

Heat the oil in a wok, add the shrimp and stir-fry until cooked. Add the tofu cubes and continue stir-frying until evenly heated. Pour in the prepared sauce and quickly toss until the sauce evenly coats the tofu and shrimp. Serve immediately.
