Stir-fried Silver Cod with Hangzhou Chili Peppers

Ingredients

Dried silver cod (gutted) 100 g
Hangzhou chili peppers (halved, deseeded, poked with a fork) 80 g
Garlic (sliced) 3
Sesame seeds 1 tsp
Cooking oil (divided) 3 tbsp
Sesame oil 1 tsp
Rice syrup 1 tbsp
Chili paste 1 tbsp
Sugar 0.5 tbsp
Cooking wine 1 tbsp
Minced garlic 1 tsp
Soy sauce 1 tsp
Salt a pinch

Instructions

1

Step 1

Halve the Hangzhou chili peppers, deseed them, slice the garlic, and poke holes in the peppers with a fork so they absorb more flavor.

2

Step 2

Gut the dried silver cod. Once the pan is hot, add the cod and stir-fry briefly to remove any off-odor.

3

Step 3

Prepare the seasoning sauce by combining all the seasonings together and stirring until evenly mixed.

4

Step 4

Add 2 tbsp of the cooking oil, the garlic slices, the Hangzhou chili peppers, and a pinch of salt. Stir-fry briefly, then remove and set aside.

Step 5

Add the remaining 1 tbsp cooking oil, the silver cod, and the seasoning sauce. Stir-fry until evenly coated, then turn off the heat. Return the Hangzhou chili peppers to the pan and finish by drizzling in the rice syrup.
