Prep the ingredients
Cut the smoked tofu into thin rectangular sheets, about 1/4 inch thick. Slice the pork belly into small pieces. Trim the garlic scapes and cut into diagonal pieces about 2 inches long. Separate the white and green parts of the scallions.
Render the pork fat
Heat oil in a wok over medium-high heat until shimmering. Add the pork belly pieces and spread them out in a single layer. Let them cook without stirring for about 2 minutes until the edges turn golden and the fat begins to render. Stir and cook another minute until lightly crisped.
Bloom the aromatics
Add the ginger slices, minced garlic, and scallion whites to the wok. Stir-fry for 30 seconds until incredibly fragrant. The aromatics should sizzle and perfume the oil.
Stir-fry the tofu
