Toast the baguette
Preheat your oven to 180°C (350°F). Slice the baguette into 1/2-inch thick rounds. Brush each slice generously with olive oil and place on a baking sheet. Toast for 6-7 minutes until the edges turn golden and crispy. Remove and let cool completely.
Prepare the shrimp
Bring a small pot of salted water to a gentle simmer. Add the shrimp and cook for 2-3 minutes until they turn pink and curl up. Drain and immediately transfer to an ice bath to stop the cooking process. Pat dry with paper towels, then finely dice into small cubes.
