Stir-Fried Squid with Chive Blossoms

Blanch marinated squid, then quick-stir-fry with chive blossoms, tripe slices and red carrot, and finish by thickening the sauce with a starch slurry.

Stir-Fried Squid with Chive Blossoms

Ingredients

Fresh squid (deboned, scored on outer membrane) 450 g
Chive blossoms (cut into segments) 250 g
Cooked pork tripe slices (soaked until soft, scored with cross pattern) 80 g
Carrot (cut into decorative slices) 1
Garlic cloves 2
Ginger (cut into decorative slices) 4 slices
Cooking wine 0.5 tbsp
Ginger juice 1 tsp
Salt (divided for marinade and sauce) 0.5 tsp
Cornstarch (divided for marinade and sauce) 0.5 tsp
Oil (for marinade) 1 tbsp
Sugar a pinch
Sesame oil a pinch
White pepper a pinch
Water 2 tbsp

Prep

Cut ginger and carrot into decorative slices, cut chive blossoms into segments, soak the tripe until soft and score with a cross pattern, debone the squid and score the outer membrane into decorative slices, then set aside.

Marinate and blanch

Add the seasonings to the squid, marinate for 10 minutes, then blanch in the boiling water until the squid curls up, remove and rinse with cold water.

Stir-fry the chive blossoms

Heat the oil, add the chive blossoms with a pinch of salt and a splash of water, stir-fry briefly, then scoop out and set aside.

Combine and finish

Heat more oil and sauté the ginger, garlic, and carrot until fragrant, add the tripe slices and squid and toss together, pour in the wine, return the chive blossoms, add the seasonings to thicken the sauce, mix well and serve.
