Ingredients
firm tofu, cubed
1 block (about 300-400g)
shiitake mushroom sauce with fermented bean flavor
2-3 tablespoons
cooking oil
a small amount
garlic cloves, sliced
2-3 cloves
Sichuan peppercorns
a pinch
scallions, finely chopped
for garnish
salt
to taste

Bloom the aromatics
Heat a small amount of cooking oil in a wok over medium-high heat. Add the Sichuan peppercorns and sliced garlic, stirring until fragrant.

Add the sauce
Add the shiitake mushroom sauce with fermented bean flavor to the wok. Stir-fry until the oil takes on a reddish hue and the sauce is well heated through.

Cook the tofu
Add the cubed tofu to the wok and gently stir-fry, coating the pieces evenly with the sauce. Cook until the tofu is heated through and has absorbed the flavors.

Season and serve
Remove from heat and season with a small pinch of salt. Garnish with finely chopped scallions and serve immediately.
