Stir-Fried Tofu with Shiitake Sauce

Story

This straightforward stir-fry showcases how a well-crafted sauce can transform simple tofu into something memorable. The combination of shiitake mushroom and fermented bean flavors creates a deeply savory profile that pairs wonderfully with steamed rice.

Ingredients

firm tofu, cubed 1 block (about 300-400g)
shiitake mushroom sauce with fermented bean flavor 2-3 tablespoons
cooking oil a small amount
garlic cloves, sliced 2-3 cloves
Sichuan peppercorns a pinch
scallions, finely chopped for garnish
salt to taste

Instructions

1

Bloom the aromatics

Heat a small amount of cooking oil in a wok over medium-high heat. Add the Sichuan peppercorns and sliced garlic, stirring until fragrant.

2

Add the sauce

Add the shiitake mushroom sauce with fermented bean flavor to the wok. Stir-fry until the oil takes on a reddish hue and the sauce is well heated through.

3

Cook the tofu

Add the cubed tofu to the wok and gently stir-fry, coating the pieces evenly with the sauce. Cook until the tofu is heated through and has absorbed the flavors.

4

Season and serve

Remove from heat and season with a small pinch of salt. Garnish with finely chopped scallions and serve immediately.
