Stir-Fried Watermelon Rind with Shredded Pork

Ingredients

Watermelon rind (peel off the outer thin layer, wash, cut into thin strips, toss with 3 g salt, marinate briefly, then squeeze out the brine) 300 g
Lean pork (rinsed and cut into thin shreds) 150 g
Peanut oil 60 g
Sesame oil 10 g
Salt (3 g of this is used to marinate the watermelon rind) 9 g
Cooking wine 5 g
MSG 2 g
Finely chopped scallion 5 g
Finely minced ginger 5 g

Instructions

1

Prep and Marinate

Peel off the outer thin layer of the watermelon rind, rinse well, and cut it into thin strips. Toss with 3 g of salt, let it marinate briefly, then squeeze out the brine. Rinse the pork and cut it into thin shreds; set aside.

2

Stir-Fry

Place a wok over the flame and pour in the peanut oil. Once hot, add the pork shreds and stir-fry until they turn opaque. Add the chopped scallion, minced ginger, and watermelon rind, and toss together a few times. Stir in the cooking wine, salt, and MSG to combine evenly, drizzle in the sesame oil, and serve immediately.
