Stir-fried zucchini this way, tender and crisp without watery liquid! Fresh and flavorful, nutritious and perfect with rice

Ingredients

zucchini 1
eggs 2
ground meat 100g
garlic 2 cloves
Thai chilies 2
rice wine 1 tbsp
light soy sauce 1 tbsp
oyster sauce 1 tbsp
salt to taste
black pepper to taste

Instructions

1

Step 1

Prepare the ingredients:

2

Step 2

Cut the zucchini into long segments, then cut lengthwise into 4 equal parts, slice thinly, and remove the seed core in the middle (If the zucchini is very tender, you can skip removing the core).

3

Step 3

Add a small half-spoon of salt to the sliced zucchini, mix well by hand, and let it rest and marinate for about 10 minutes.

4

Step 4

✨ This trick of "salting to draw out water" is the secret to keeping the zucchini tender, flavorful, and never releasing liquid ✨ Rinse and squeeze out excess water before using.

5

Step 5

Mince the garlic, cut the Thai chilies into small rings; add a pinch of salt and black pepper to the eggs, beat well, and set aside.

6

Step 6

Heat the pan with cold oil, first add 1 tbsp of oil. Once the oil is hot, pour the beaten eggs into the pan. After the eggs slightly set, gently use a spatula to flip them into golden curds, and set aside ~ ⚠️ Avoid overcooking; keep the eggs soft and fluffy.

7

Step 7

Add a little more oil to the pan, then stir-fry the ground meat until it changes color.

8

Step 8

Add the minced garlic and Thai chilies and stir-fry until fragrant.

9

Step 9

Pour in the rice wine, light soy sauce, salt, and black pepper; stir-fry to color and season.

10

Step 10

Add the prepared zucchini and stir-fry for a few seconds until slightly softened. If you don't like zucchini too soft, shorten the cooking time to maintain the crispness.

11

Step 11

Add the oyster sauce and continue to stir-fry evenly.

12

Step 12

Finally, return the eggs to the pan and toss everything together to ensure the eggs are well combined with the other ingredients.

Step 13

A nutritious and delicious dish to serve with rice is ready ✔
